A Few Pictures to see!!!
For many of you out in blog land.. I have a few pictures to share... Starting with my birthday. Yep.. As you can see my Mom was so kind not to put all the candles on the cake... 29 is a lot of candles...hehehe!













This past weekend we had the chance to run up to Jacksonville for our good buddies son's 3rd birthday party. It was a riot.. there's nothing like watching a bunch of kids play in a bounce house all suger high.... this is a picture of the birthday boy Owen with frosting face!!! Can't believe he's so big.... fun was had by all!!!




And of course there's lil' sis Ava getting into the frosting too!!!

Here are the Men folk deflating the bounce house... I think thaey had as much fun as the kids did playing in it....The kids were kind of bummed but they were ready for fun time again .... there was fun with water guns...a laughter was had by all!!!!

CONFETTI.....RULZ!!!!

Let's see, well, we will start at the beginning of the story. The 1st of december was my bro-in-laws birthday. Roy turned a huge whopping 30.We had a little shindig on Sunday!!!! So we made him a big box of gifts... and it was laced with confetti. Sorry Mom Coe... We couldn't help ourselves.

And of course.... there was a delicious dinner.. The beer dinner, ...starting with beer cheese dip, beer punch, salad with beer punch vinaigrette, green beans with beer lime and olive oil, roasted sweet potato's cooked with beer, and of course beer can chicken. No the cake didn't have beer in it..but everything else did!!!! Beer was had by all..and there was much rejoicing...yeah!!!! So Roy happy birthday again and many more...CHEERS!!!!

HMMM..what to write...I had a few interesting thoughts!
Driving buy the local 7-eleven i thought..hmmm.. I wonder when the slurpee came about?Really I was thinking.. since I moved back to the bay area, this past August. In Jacksonville Florida where i spent the last 6 years.. there sadly are no church of the holy slurpee's. I had to go through some days thinking that i wish I could run out and get one..and I couldn't. So here's a little history for everyone...

40 Years of Slurpee
It was back in 1965 when the Slush was first invented and began to be sold by 7-Eleven. Two years later, in 1967, 7-Eleven re-christianed their icy, delicious slush drink as the Slurpee. It has been forty years since the drink that would become the famous well-known Slurpee was created, and it has never been better. Thank you, Slurpee, for all you have given us; all the happy memories, all the sugar highs, and the splendid bliss that each slurp brings...

The Magic number is 33.6 this week!!!!

What does that mean you ask? Well that's the number of miles I have biked this week so far, not bad i say. It's a start for sure, but there is much more to be done. My goal is about double of that per week, about 12 miles 5 days a week should do it. Then I have to do the weights, and the excercises for the gut. Bring it I'm ready to get the blood flowing! I like to bike before work because it get's the blood flowing and my energy up! So cheers to more bike rides!!!!

All in a Days work...

Today(Monday) I started my new job at the restaurant.. and all is well. I worked from 10 till about six, not to bad really. I have to say my feet are a little tired after being off for about a month, so i guess I have to break them in. I guess i didn't forget to cook either...not that i would have. I'm tired but not exhausted , will see by the end of the week. The Chef (Cathy) seems pretty cool, kinda crazy but that is to be expected...it comes with the territory. Tomorrow (Tuesday) i work at 2 in the afternoon till close, so i will have to time to put in a little bike ride before work. So everyone that's the scoop on today...as the food mill turns!!!

P.S. did you all see "HERO'S" the show tonight...WOW!!!! What happens next? I can't wait!

Sunday in review.....

As you can see I'm choosing to use Buc's colors due to celebration purposes. Yes the Buc's beat the Cardinals... yeah....and there was much rejoicing in The Land Of The Tampa Bay!

So what did the K-C's do on this fine day? Well, The Mister Had to go to work...to cook due to an issue with a former employee. But as his Grandmother told me after church today "you gotta do, what you gotta do". After church i went on a secret birthday mission since both of my Parents will be celebrating soooon! Mission accomplished!

Then after working and washing the laundry.. it was off to Maw and Pa C's for Sunday Night Dinner. The whole clan was there, Roy (greg's bro), Kimmie ( Roy's Gal), Grandma, Maw ( a.k.a. Gregs Mom), Pa ( Greg's Dad) and Us of course. There plenty of good food and laughter for all!!!

Well, that's a wrap... Time to hit the hey so I can be ready for work in the morning!!!

Reflections of a Dinner Eaten


So as we were sitting in the bliss of having enjoyed yet another great dinner at home together we said to ourselves, "selves lets have some dessert!" Having just gone to the store for some much needed supplies and a few other sundry things, choosing a dessert was easy COOKIES! We munched on the fudge covered chocolate chip cookies in cocoa bliss and then we made a mistake. We looked at the food label.


This got us to comparing the two things that we had just eaten, a salad with some meat and cookies and we came to a somewhat startling conclusion. There were more calories in the three cookies that we ate than in our entire dinner. Talk about a calorie dense food.


Here is another Morsel of food for thought:

There are as many calories in those three cookies as there are in three Idaho potatoes. Can you eat a pound and a half of potato or an ounce and a half of cookie? If you can good for you, there's toilet paper next to the commode. (and a magazine if you so desire.) What does this teach us? Its good to know what you eat and where it came from, it makes us healthier. And the other lesson of the day, when enjoying a cookie, just enjoy it for what its worth and don't look at the label. Well actually you should look at labels.

I officially joined the working folk today....

That's right you heard me, I got a job as a sous chef in a small local restaurant. I have plenty of work a head, no more slacking. I guess it's time to get to work after being off for a month. i hope i didn't forget how to cook...just kidding. So I guess i have to call the unlucky people that didn't get to hire me.. to bad for them.

Well, i guess i need to go find some new work clothes... Sorry about my blogging slacking.. I promise to be better.

The job hunt...starts Offically...TUESDAY...

I spent the day polishing up th resume..I was supposed to hit the pavement today, but I had to download the driver for my printer then I had a little trouble getting formatted correctly. It took way tooo long but it's under control. So i lost a day..so what. I jumped on the bike and road for a half an hour about 5.5 miles to get the blood flowing. I feel better now, and I'm ready ... to start tomorow. It's exciting to look for a job.. so I'll let you know how it goes.

The past weekend was fun and relaxing. Saturday we had a welcome home get together with family and it was very much fun! We snacked and drank some libations. Played some foosball and laughter was a plenty. Sunday we got up and went to church, then my sister Sarah and husband Laszlo came over and we watched some movies. Transformers and we also watched The Silver Surfer....they were both good. It's good to be home!

Last Friday at Grandfather mountain!!!! SOOOO COLD!
My sister Karen turned sideways...oops... we just crossed the swinging bridge. Not only was it really, really windy it was also really cold...burr!
It was a little scary crossing the bridge because the wind was howling through the metal bridge itself. But it was worth the frozen nose, and hands to see the view! Karen and Sarah (my sisters) at lunch on Grandfather moutain. This day we had turkey sandwiches fruit and chips. It was nice to have something besides peanut butter.
After freezing our bumms off we went back to the house and had Karen's delicious chilli! It hit the spot.. along with a champage toast.
Our last supper in North Carolina... I have to say that Karen's suggestion to bring the crock pot was excellent... we could play all day and come back with a meal ready!
I know we all had a great time and are very blessed with such an awesome family!

Vanderbilt's 250-room family home and country retreat in Asheville, NC. There I saw original art from masters such as Renoir, magnificent 16th-century tapestries, Napoleon's chess set, a library with 10,000 volumes, a Banquet Hall with a 70-foot ceiling, 65 fireplaces, an indoor pool, bowling alley, and priceless antiques.

POST CARDS DAY 2

OUR DAY 2 STARTED UP BEFORE THAT CRACK OF DAWN.

ABOUT 6:45....BUT WITH A VIEW LIKE THIS..NEED WE SAY MORE...


THEN WE ALL ATE BREAKFAST AND JUMPED IN THE CAR, AND HEADED OFF FOR ANOTHER DAY OF ADVENTURE!!!!!
STOP ONE OF THE DAY THE BLUE RIDGE PARKWAY. WE WERE HEADING TOWARDS THE GREAT SMOKEY MOUNTAIN NATIONAL PARK.













WAS VERY BEAUTIFUL..AND WORTH THE DRIVE.

PIT STOP ON THE PARKWAY, THEN ONWARD TO THE SMOKIES....WOOHOO!!!!





WE SAW SEVERAL CYCLISTS ON THE PARKWAY.. THEY WERE HAULING...BUTT!!
JUST THINK DOWN HILL RIDING WELL OVER 40MPH ON A BIKE..WOW!








PICNIC LUNCH IN THE SMOKIES. PEANUT BUTTER AND JELLY SANDWICHES, PRETZELS, APPLES, GRANOLA BARS, AND WATER WAS THE MENU!











THEN WE HEADED UP TO CLINGMANS DOME. I'M A FLATLANDER..IT KICKED MY BUTT!
At 6,643 feet, Clingmans Dome is Great Smoky Mountains National Park's highest point. It is the highest point in Tennessee, and the second highest point east of the Mississippi. Only North Carolina's Mt. Mitchell (6,684 feet) rises higher.
Clingmans Dome is a popular Park destination. Located along the state-line ridge, it is half in North Carolina and half in Tennessee. The peak is accessible after driving Clingmans Dome Road from Newfound Gap, and then walking a steep half-mile trail. A paved trail leads to a 54-foot observation tower. The Appalachian Trail crosses Clingmans Dome, marking the highest point along its 2,144 mile journey.

Were Baaaack!!!!!!! Home Sweet Home....

Hello all were back to the west coast of Florida. It has been a long six years in Jacksonville, it was good but it's over. Greg is done with school and has become gainfully employed as Assistant Dietary Director Of a long term care Facility in Pinellas Park. Three cheers and 2 beers to him...Whoohoo!!!!!

So the party is officially on... The K-C's have returned so you better watch out...

P.S. Welcome home party to be announced soon so keep your ears and eyes open!!!!

Stuff...Stuff...and more stuff...
So I've been getting ready for the big move... Can I get Scotty to beam it over...for us. Packing hmmm? Where to begin, for one thing I didn't think we had so much... and that's with pairing down over and over again. I've been trying to find the homor in packing...maybe a little poem? I think NOT...so back to packing.

LONDON (Reuters) - Scientists have developed a non-stick chewing gum that can be easily removed from pavements, shoes and clothes.
The new gum, the result of polymer research at the University of Bristol, could be launched commercially in 2008, its backers said on Friday.
"The advantage of our Clean Gum is that it has a great taste, it is easy to remove and has the potential to be environmentally degradable," said Terence Cosgrove, a professor of chemistry who helped found a company called Revolymer to commercialise the technology.
Today's chewing gums are made from synthetic latex, which is resistant to the weather and is strongly adhesive. The new gum adds a special polymer to modify its properties, making it far less sticky.
In two street trials, leading commercial gums remained stuck to the pavement three out or four times, while Clean Gum came away naturally within 24 hours in all cases, Revolymer said.


If you ask me that's a worth while invention. There's nothing worse than gum stuck to the bottomof a shoe, desk, or hair. Ahha... we out smarted some nasty/ lasy/ bad mannered people... BRILLANT!

GO BUCS!!!!!
I just wanted to give a little shout out to my home team....They played awesome today!!!!! And hopefully it continues this way... cause winning is more fun than losing.

Another lovely weekend off....
It's very nice to have the weekend off, since i have worked so many. Saturday morning I got early and went shopping with my lil' sis Karen. I was showered and dressed by 1o:00 (really)and on the road around 11:00. We went down to the outlet mall in St. Augustine and I found a few good deals I couldn't resist. In the mean while the boys went golfing and had a bunch of fun.
When we got back to the apartment, the boys were watching the boob tube relaxing. Then the Nichs headed off to church because they were going to the Jags Game Today (Sunday). Greg and I relaxed a little more, then headed over to Tricks Place for glass of wine before dinner. Then it was off to a really good Brazilian restaurant for dinner. Its great you start off with a salad bar then the fun begins. There are these guys that go table to table with large pieces of different meats on these longs skewers and cut it for each person and each table. Yes this is a happy place to eat. Lots of chit chat and food... and good beverages. After that we walked down to an Irish pub and had a few beverages (well that's what you are supposed to do there). Headed back home... Where Trick and I did a few shots and laughed as Greg feel asleep an the couch.

Sun. was relaxing...Greg headed to the west coast to do orientation for his new job.... If you haven't heard yet we will be relocating back to the west coast of fl. at the end of this month. I went over Bridget and Mike for football, food, and fun. Everyone is well over there.
Back to work tomorrow....but that's OK my last day is the 26 of September!!!!

How we spend our nights...

Yesterday(Monday): Well I was off of work so i did the usual chores... So much excitement! Nothing like laundry and cleaning and a little boob tube. Thank goodness that was not the high light of my day...sigh.... Greg came home stop by the store and picked up some subs, I was not in the mood for cooking. We spent some time chit chatting, which i always enjoy. I know what your saying, what's so great about all that. Later around 9:30 Are buddy Patrick(A.K.A. Trick) came buy to hang out and share a delicious frozen pizza. There's always plenty of laughter... and booze too!!! No we did not do pie and beer, that's what most would expect. Not us, we tend to be a little more adventurous, maybe that's not even the right word? Drank some water and popped open a fantastic bottle of cognac. We had to keep an eye on Trick, because he wanted looked like he wanted to take the bottle with him. We enjoyed sipping it very much, nothing like good company and fine spirits!!!!! The night ended with a smile from all!!!!!

Today(Tuesday): Went to work like usual, and received a call from the Mister saying he accepted a job offer in the Tampa area..... Were coming home....! How exciting for us, it's been a very long road. Just a reminder to those in Jacksonville, just because were moving doesn't mean will stop bugging U!!!! The Mister has informed most everyone, and tomorrow I'm putting my 2 weeks notice in. After work we Hit up a Mexican restaurant for some chimi's ...yummolah!!! Then Trick invited us buy to congratulate Greg on his new job. Yes and the whole champagne toast and all.
And a few other drinks..some snacks.....and it's amazing the ideas we come up with. Well it's REALLY late I need to hit the hay...

A nice day off.....it went like this...
Sitting on the couch at noon thirty sipping a coffee and enjoying some delicious fruit is the way i like to start off my day. Then slowing moving onto a load of laundry..and tidying the kitchen, not so fun but chores are inevitable. Time for the second cup of coffee, i can fell the energy start to build. Or maybe be it's really the caffeine? Yeah it's the caffeine... no joke.... but it seems to do the trick. Moving on with my day i watched some pbs show it was good! i learned about digestive disorders and how to really fix them naturally, it all made sense to me. I still don't understand...why people spend so much time eating so much food that messes them up...

I talked on the phone to my Mom, and my older sister, i know they miss me. I would miss me too!!! I'm a really fun and cool person to be around. I know you are all are agreeing with me, of course. Then the mister and I went up Casa de Nich's, and all is well there. They went to the gym and the Mister and I worked on his car. He has sycamore tree stains on his car paint. They look like little orange spots, that are hard as hell to remove. We found a new technique, it's called claying. You rub a special piece of clay over the paint, with this spray stuff. it works very slowly... we will have do it a few more time...but oh well.If you have any brillant ideas let us know...

Then Dinner and a movie that was quite silly Larrry the Cable guy Heath Inspector , a full day for sure.. i know how to pack it in...Back to work tomorrow ...yuck!

I love food don’t get me wrong, but day after day there are many times when I don’t want to eat any of it. I can be soo hungry at times, I start to rack my brains out trying to figure out what I want. I don’t want any of it…yuck. That was today, maybe I’m just tired? Or just a little bit crazy. Right now I’m hungry, but I can’t think of one thing I would want. Not even chips or chocolate…oh stop the insanity!!!! By the way I'm still hungry....

So anyone read anything interesting Lately??????

Well, I finished the last Harry Potter book a couple of weeks ago... what next? i had been contemplating what I should or would like to read next...hmmm. then I thought about it more, and more, and more...then i came to a conclusion. I have never read the bible from cover to cover, so that is my final decision. So far so good.... I'm reading about the birth of Isaac, the son of Abraham and Sarah. Genesis 21. I'm taking time to read all the foot notes, and I had never done that before..it helps a lot... along with the maps and stuff, too! I'm working wisdom, and knowledge. I really find the choice of names interesting... since they all have symbolic meanings. Genesis as many of you know explains how the earth is populated, who came from who, and who doesn't get along... and so on... if you have some time i invite you to dive right in there's plenty of food for your soul.


What is one to do when Hubby is out of town????

It does get boring at night after work....when the house is empty. I'm not really into going out after work to often. But i do enjoy sleeping in the middle of the bed. It's so very comfy to have that extra pillow, not to mention the alarm is closer for me to hit snooze a few times.... no snoring is very cherry too! Don't get me wrong.. I do miss him of course. So what have I been doing besides reading my bible, not much...laundry, cleaning out the nasty fridge, and blaring music that the mister isn't to keen on! I took a nice bubble bath while one our house pets, ie lizards watched. He looked rather bored too! Well I better get to bed, because it is way to late as usual. Boy what an exciting Day i can hardly sit still!!!

I'm glad i don't live next to that church... but that seems to be a pretty steep fine if you ask me. On the other hand maybe they should get up up early and go to church!!!!

D'oh-n't forget to see The Simpsons Movie!!!!
So we went out for a bite to eat at Cheeburber Cheeburger, no your not seeing things that's
how it is really spelled. I know it seems like i may have missed a few letters here and there... but it was intentional this time. We splurged and had milk shakes and burgers and they were totally awesome.... I recommend this place highly! They have a real soda fountain, like a 50's style diner. Really cool doo wop music that just puts U in the mood for fun and frivolity! Then we went on our way to see The Simpsons movie...all I can say it's wrong in so many ways but totally hilarious. So if you want a good laugh you should check it out. We enjoyed it thoroughly and you may too!

Time to ramble a little…
I had some great ideas to blog but after I ate my dinner I went into a coma

First things 1st
, why does it seem that there is always so muck laundry to wash? There are only 2 of us here and it seems like the hamper has no bottom, or we just can never find it! I no my Mother would suggest naked day so all the laundry could done …. And the more I think about it the more appealing it seems. The weather has been really, really hot!

Next topic, I tasted the most delicious cake today….We have a New Pasrty chef at work and she makes some really tasty items. It makes it hard to behave when there are so many things to try. Back to this awesome cake, it was a mocha mousse cake with a chocolate walnut topping that was gooie… it the best cake so far… I say that about each new dessert I try… I think this will be hard to beat! I know it's tough to be me ate these times!!!

Last but not least… what do you do with a watermelon that has no flavor? Pickle it! It is a delicious way to turn a loser into a winner. It’s so easy, mix red wine vinegar, salt, black pepper, and a little sugar and pour it over some cubed water melon…toss it in the fridge over night and ala ka zam…. If you want you can throw in some thin sliced onion and some mandarin oranges just for fun… try it some time.. it’s a real winner and it’s good for you too! Well that’s all the rambling for now… see you next time….

Happy belated 4th of July!!!!!
I hope everyone had a great Independence Day. Mine went well, work as usual and bbq, dogs, burgers, slaw, potato salad, macaroni salad... Blah... Blah..Blah...if you get my drift! But all were happy and feed, and then went I home. Enough of that stuff on to more important stuff.

YO ho HO and a bottle rum!!!!

Well on Sunday the K-C's went and saw pirate movie # 3.... it was fun and if you like the other2 you should go see it in the theatre because the effects are pretty cool!!! So we recommend it so check it out...

Then Monday the Mr. went to work and the Mrs. was off and did laundry, organized and sorted food pictures. Afternoon came.. and the Mr. brought a late lunch home and then we played video games... really you should try it with your mate.. it's challenging and fun.

That's about it really!!! Such exciting lives we live...but that's all we have time for while our quest continues to get to where we are going.. if you no what we mean..

Thinking.....hmmm,
The last two days my partner in crime Remi was off, so i can be off this weekend. For my Mom-in-laws B-day party over on the west coast. There was no one in my kitchen except for those passing through to get to the freezer, or ask questions. I had a really cool conversation with myself, and no one else could hear me. The really cool part was before I knew it all this food done and it's like i wasn't even there....hmm very interesting. I wonder if anyone looked in the window and caught me contemplating?

Well folks the Mr. and the Mrs. had to do a late night shop for stuff we needed. So we went to one of the only stores In JAX that's open late, The Stuff-Mart. Remind us to never go there late at night because all the rednecks with screaming children, stoners, and hooligans come to gather there at this time. After shopping there we needed a drink, so we had two and all was better...

Did you know there's only eight days till Linda my Mom-in-laws birthday and it's a BIG one.....

Tumble Weed Memorial Day Weekend

We had the bookends of a long weekend off together. On Friday we lazed around for a while than said to ourselves, "selves, we should go and see Shrek" so we took our own advice and saw it. Very Funny lots of good jokes all that you would come to expect from such a good franchise.

Saturday and Sunday were a blur for Laura as she had to work. So Greg spent the days being the good house hubby that he is and did laundry, cleaned the bathroom, and other household chores that begged to be done.

Monday was another laze around day and then started talking to ourselves again saying "selves we should call Mike and Bridget to see if they would like to laze around just like us and low and behold they did." We spent the evening nursing a couple of kids with the sniffles and having a blast. Their daughter now has a thing where she lays down on the floor and wants to be spun around like a pinwheel followed by choruses of again. The real fun part is when she gets up and tries to walk afterward, she looks like a drunk munchkin. So that was our weekend in a nutshell talk to yall later.

Take Me Out to the Ballgame

Once in a while Laura actually gets a day off when Greg has a day off. Saturday was one of those days. We decided to go to a baseball game. The local team is the Jacksonville Suns and seats behind home plate are only eleven dollars so why not. Joe and Karen joined us so it was fun to do on a Saturday night.

Save the cracker jacks we did everything one must do when they go to the ballpark like have a dog and a beer. Have some peanuts and have fun. We even had some fun at Joe's expense. Just before the seventh inning stretch Joe decided he no longer wanted to drink his beer but wear it. We had a lot of fun pointing out that it looked like he had wet himself and being the good sport that he is joined in the joking. He was only a little self conscious walking back to the car and asked Karen to walk behind him to obscure the view. (She occasionally "forgot" she was doing this exposing Joe's sudsy problem)

We had a lot of fun and it was nice because the Suns won and we got to spend time with family. Well its late and we have to go to bed. Bye for now

To much work and no play makes laura a dull Girl....

Not really.. it makes me a little insane. This past week we had the Players championship in town.. you know the golf tournament. And on top of that the last day of it was Mother's Day, so it was a very long week. We did host some fun events but they were a lot of work. But we made it, we always do. I was happy to be off yesterday, but I have to wait till saturday for my next day off. Enough shop talk is what I say!!!

On this past Saturday we celebrated our 6th wedding anniversay, time flies when your having fun. We didn't really get to do a whole lot of celebrating due to my busy work week. But when we have a chance we will.

HOW MUCH FIBER DO YOU NEED?
To get the full health benefits of dietary fiber, adults should eat 25 to 35 grams of fiber each day. Most Americans eat only around 11 grams. To calculate how much daily fiber your child needs follow this formula: age of child in years plus five. For example, a five-year-old would needs ten grams of fiber a day.

It's important even it seems yucky to talk about.
How much fiber is too much? Your intestines will tell you. Gradually build up the amount and variety of your daily fiber intake. Signs of insufficient fiber in a diet are:
Constipation
Infrequent stools
Hard stools
Abdominal pains

A general feeling of "sluggish bowels"
Signs of too much fiber are:
Excessive gassiness
Bloating
Abdominal pain
Stools uncomfortably frequent and large overall volume


TEN EASY WAYS TO BOOST YOUR DAILY FIBER
1. Consume whole fruits and vegetables instead of juice. The peels on apples and the white pith on oranges are rich sources of fiber, as are potato skins.

2. Cut back on refined foods. "Enriched flour" means the product was originally impoverished. In many refined foods, the fiber-containing parts have been removed.

3. Try a daily yogurt smoothie made in the blender with a couple handfuls of fresh fruits, such as strawberries, bananas, papaya, blueberries, and pears. Blend in a heaping tablespoon of psyllium husks. Drink it quickly before it gels.

4. Snack on dried fruits, such as apricots, figs, prunes, and raisins.

5. Use whole grains instead of white. White bread and white rice have had the fiber processed out of them. (This is why white bread and white rice have a reputation for being constipating.) Instead use whole grains: bread made with whole wheat flour, whole grain cereals that contain wheat bran or oat bran, whole grain cornmeal, wheat germ, and barley. Instead of white rice, use brown or wild rice.

6. Be a bean freak. Nearly all varieties of beans are a rich source of fiber, especially kidney beans, which can be served in many forms, such as in salads, soups, bean burritos, or chili.

7. Dip it. A chickpea dip (i.e. hummus) is nutritious and fiber-rich.

8. Choose a high-fiber cereal. If you find that high-fiber cereals are not the most palatable, try mixing a couple of tablespoons of All-Bran or psyllium husks with your favorite cereal to boost the fiber content. Add lots of milk, rice beverage, or juice and enjoy.

9. Choose your lettuce wisely. Iceberg lettuce is useless as a source of fiber and any other nutrients. Spinach and romaine lettuce are healthier choices.

10. Fresh fruits have more fiber than canned fruits because much of the fiber is in the peel, which is usually removed in processing.
Simply emphasizing grains, fresh fruits and vegetables in your diet will automatically get you enough fiber. A diet that revolves around meat, eggs, and dairy products will not contain enough fiber.

8 DAYS TILL GRADULATION!!!!!

Happy birthday..one more time!!!!

Finally I got to take Greg out for his B-day celebration. It was delayed by my lack of days off from work. So we meet up with Karen and Joe and went to our local wing joint for some dinner. So there were wings galore, beer, and all the wet naps we needed. Laughter a plenty...but that's normal. After dinner the boys played a boxing game the rated your punch. Greg got the score 800 something which classified him as superman, and Joe scored 700 something which titled him killer. That thought it was pretty fun and Karen and I laughted some more!!!!

7 HEALTH BENEFITS OF FIBER

1. Fiber curbs overeating. Fibers are filling without fattening. High fiber foods require more chewing, and the prolonged chewing, besides pre-digesting the food, satisfies the appetite so you eat less. Fiber stays in the stomach longer, absorbs water, swells, and helps the eater feel full. Because of this feeling of fullness, people on high fiber diets tend to eat more slowly and eat less, especially less fat. Best fibers for weight control are bran and the pectin from fruits.

2. Fiber steadies your blood-sugar level. Fiber, especially the soluble type, found in psyllium, bran, and legumes slows the absorption of sugar from the intestines. This steadies the blood sugar level and lessens the ups and downs of insulin secretion. Keeping insulin levels low and stable also helps the body store less fat, another perk for people trying to control their weight.

4. Fiber reduces cholesterol. A diet high in soluble fiber, such as that found in oat bran, whole oats, psyllium, legumes, barley, fruit, and prunes, lowers blood levels of the harmful type of cholesterol (LDL) without lowering the good cholesterol (HDL) levels. As it travels down the intestines, soluble fiber absorbs water and forms a gluey gel which picks up cholesterol and carries it out of the body. Yet, doctors caution, adding more soluble fibers to your diet is not a license to eat high cholesterol foods. High fiber diets are usually low in fat, too, and the cholesterol-lowering effects may be related to less fat in the diet as well as to fiber. Recent studies showed that eating an extra ten grams of fiber daily (the average American adult eats only eleven grams of fiber a day), decreased the risk of dying from heart disease by 17-29 percent.

5. Fiber promotes regularity. Insoluble fibers, mainly the cellulose in skins of fruits and vegetables and the husks of grains help prevent constipation; their sponge effect absorbs a lot of water into the stools, making them soft and bulky. This type of stool stimulates the intestines to contract in an undulating way, called peristalsis, which sweeps stools along -- the broom effect of fiber. In cultures that typically eat higher fiber diets, people tend to produce stools that are softer, larger, and more frequent, unlike the smaller, harder, and less frequent stools associated with the typical Western diet.

6. Fiber reduces cancer risk. While soluble fiber helps protect against cardiovascular diseases, insoluble fiber protects against colon cancer. The incidence of colon cancer is significantly lower in cultures where people eat lots of high-fiber food. Increasing your consumption of insoluble fiber, such as that found in whole grains, especially wheat bran (i.e., All-Bran) is one of the most effective dietary changes you can make to decrease your risk of colon cancer.

7. Fiber is a family food. In addition to being friendly to aging bowels, fiber is also valuable for school-age children, mainly because it delays the absorption of sugars from the food into the bloodstream, making the blood sugars more stable - and, consequently, making the children more likely to behave and learn better. Send your child off to school with a breakfast containing at least 5 grams of fiber, the amount contained in a medium-fiber cereal and one serving of fruit

Fantastic Fiber Part I

WHAT IS FIBER?
Grandma always told you that "roughage" was good for you, and now research is proving that fiber in foods is important to health. Fiber is the part of fruits, vegetables, and grains that is neither digested nor absorbed. Why should fiber matter to good nutrition, since it doesn't provide any calories or nutrients? Fiber helps keep your intestines working comfortably and helps prevent many diseases. Here is why fiber is so fantastic:

Fiber comes in two forms, soluble and insoluble. Each acts differently in the intestines and benefits the body in different ways. Soluble fiber acts like a sponge; insoluble fiber acts like a broom.

Soluble fiber. Found in dried beans and peas, oat bran, rice bran, barley, and fruit pectin (the substance used to thicken jams and jellies). Soluble fiber absorbs water in the intestines, mixes the food into a gel, and thereby slows the rate of glucose absorption in the bloodstream. Helps keep your blood sugar level, so you don't have ups and down in your energy level.

Insoluble fiber. This is the stringy stuff that holds plants together. It's called "insoluble" because it doesn't dissolve in water. It can be found mainly in plant leaves, peels, skins, and the coverings of whole grains (e.g., wheat bran). Like a disposable diaper, insoluble fiber can absorb many times its own weight in water. This water adds bulk and softness to the stools and keeps them moving along more comfortably. Think of eating fiber like brushing your teeth - it cleans out your intestines daily.

Happy Birthday Greg

Well today is Greg's 31st Birthday (Yeah) Unfortunately we both had to work today so as it was we celebrated last night. Greg was invited to dinner at their good friends' Mike and Bridget House for Grilled Wings and baked Fries and a chocolate cake made with orange juice rather than water (its really tasty) and then home to open presents with Laura. Greg certainly was well remembered this year with all kinds of wonderful presents from everyone. Though seeing as it is late and Greg is tired I think We'll head to bed to wake for another day at the grind stone. Love to all. G & L

After work the Mister and I took a walk...that's the regular part of the story. But tonight we were so dedicated that we walked during a wind storm. That's right 25 mph winds that came in with that cool front, it was mighty chilly too. So half the walk it was hard to walk and half we had a little extra help. Our motto is "no more excuses".... we will work out like a mail man, we will walk and work out no matter the weather. Bye the way Greg is able to do 13 pushups...you go with your bad self!!!! Lifes to short for excuses!!!!

Weight loss experts say the same thing: In order to lose weight, you must walk for an hour a day, 5 or 6 days a week. To most of us, that seems like a huge chunk of time. That's another 20, at least.I may take a walk break mid-afternoon, when I feel myself slumping in front of my computer. Then, after dinner, I either walk around the track by my home or pop a Leslie Sansone walking video in the VCR. I could feel satisfied with 40 minutes, but if weight loss is the goal, it's just not good enough. (And many guidelines suggest that a minumum of 1 hour a day may be the best bet for staying healthy too.)Research suggests that short bursts of activity may cause your body to burn calories more steadily throughout the day. If you're stumped on how to fit an hour into your day, try this chunking approach.

Week in review....
What did you do in the last week? Well, I've been plenty busy. Lets start with last MONDAY a week ago. I was off work and so was the entire banquet staff.. which was helpful since it was our official send off party for Martin our former executive pastry chef. He's heading north to up state NY to work with a good friend and our former Chef David. We meet up at a local pub where the drinks were a plenty. We spend the evening partying culinary style (lots drinks, laughter, and bad jokes). We stayed there for a while then Greg , Dawn (good friend.. she made Karen and Joe's wedding cake) and myself went to chez le village inn for some superb late night breakfast. That is one classy joint. Then onward home, where I was out like a light.
TUESDAY is was off from work, thank God since I had my fill of liquid refreshment the night before. No hangover, but my brain was a big pile of mush. So I watched the boob tube, sometimes it even watched me.

THURSDAy....worked a little more, Greg sang at church
FRIDAY... worked a little more, Greg sang at church some more
