Cooking for One or Two

When it's just you or the two of you, cooking for a few people presents a special challenge. How do you eat a varied, healthy diet without having tons of leftovers or having to throw away food?

What has worked well for us is to make a large casserole but divide it into two smaller baking pans. Bake and wrap and freeze the other (well labeled, of course). That way you still have leftovers for lunch, and an easy dinner another day. Think about cooking once and eating twice whenever you are in the kitchen.

I also just make main dish salads in the summer and we just eat them until they are gone. I try to use lots of fruits and vegetables in them so the salads really are a one dish meal. Vary dinners by serving different kinds of whole wheat bread, or additional vegetables or fruits with the same salad.

Think about serving more unusual foods for some meals. For instance, I have found that chicken melon salad (with a yogurt dressing) makes a fabulous breakfast. Serve breakfast food for lunch or dinner. Omelets, pancakes, and scrambled eggs (maybe with sliced tomato for fresh veggies or fruit) are satisfying and comforting when eaten for dinner. You'll have fewer leftovers and more interesting meal choices. When you're cooking for two you can experiment more, so have fun!
OR
Cooking a larger quantity of food and using the leftovers in another recipes in the next day or two is also a great way to reduce time in your kitchen. An example is Roasted
chicken , you can use the leftover meat in Pasta chicken Salad the next day, or Cashew Vegetable Chicken Stir-Fry the next.

Would You Rather? Salt & Pepper vs. Butter

Lets delve into the world of seasonings and spreads, those magical toppings that can make basic foods taste better.

Option #1: You can never add salt & pepper to your food.

Option #2: You can never add butter to your food.

Now keep in mind, we are NOT talking about using salt, pepper or butter in recipes, merely the use of them as a post prep/cooking additions. You can still eat food with these ingredients in the recipe, but, for example, you can never sprinkle salt and pepper on a plate of food at home, or in a restaurant, you can never spread butter on your bread or plop it on top of your mashed potatos etc. etc.

I think it goes without saying that you are NOT allowed to try and take a shortcut on this. “Butter” in this case includes margarine and any other spreadable fat made to be similar to butter. Likewise, you can’t use “sea salt”, white pepper, or some other shortcut to get around not being able to use salt and pepper.

Sunday Recap...

Brrrr... Can you believe that it rained enough to cool the pool down to a chilly 86 degrees.
Sunday afternoon the K-C's headed over to my parents house for a early celebration in Honor of My Sister Sarah, and bro-in-law Laszlo's Anniversary. We shared some snacks, drinks and laughter that afternoon. We all decided to take a little swim in the pool, and couldn't believe that it didn't feel like bath water. It was almost chilly at first...ha ha ha.....for those of you who don't know that the pool is most often 9o plus degrees in July. Followed by a fun card game of golf we enjoyed a delicious dinner includeing a roast on the grill and a champagne toast. Then onto dessert of blueberry cake toped with fresh blueberries a bit of vanilla ice cream. It is blueberry season please do not neglect these tasty little morsels. Happy Anniversay Sarah and Laszlo and to many more years of happiness... CHEERS!! Family Time is always so fun, I am so fortunate that mine gets along and can party like the best of them!

ART...:^)

Took a trip down to the St. Petersburg Museum of Fine Art Yesterday...fantastic!

There has been some debate lately about the importance of art. This is my contribution to the discussion.When I have not drawn or painted anything in a while, I feel like something is missing. My theory is this: Just like my body needs shelter, food, and exercise, and my mind needs meditation and nature, my spirit needs art! Oh joy, to have enough free time to sit down and create something that did not exist before! (which I have time to do now...but really haven't as much as i should...) Of course, a healthy spirit trickles down to the mind-body, which experiences benefits such as clarity and calm. I am a firm believer of encouraging the arts in schools as well as in life. What can be more satisfying – and more important – than to connect with your own creative spirit? When I don’t create, my world appears duller, with less sparkle. When I create, I believe in miracles, in the good in all people, and in the future of our planet. When I don’t create, fear and doubt seeps in and faith dissipates. To me, art helps create a little bit of peace within.I wonder how many other people there are out there feeling the same way as I do? Why does art matter to you?

Remember art takes many forms...

How are you treating the temple that your spirit lives within?

Each one of us living on earth is a spirit living within a physical body. The body is the temple within which the spirit lives during a life on earth. Some of us treat our bodies well while others do not. Food is the fuel that keeps the physical body alive. Eating healthy is important for the health of the physical body.

I have had plenty of time to contemplate this thought. I have been trying to think about food in a new light, it's often hard to explain the way I think about food since my life is wrapped into it so deeply. I am a professional chef and am trying to direct my knowledge and well being to help change myself and those around me. So i decided to jot down some of the thoughts that pass through my mind...

ONE: Remember to have an attitude of gratitude.
Be grateful that I am alive. Give thanks for me body and make a promise to myself each day to treat my body well.

TWO: Make great choices as I create me financial budget.
What is more important than eating healthy food? Why would any of us want to spend money on clothes we do not really need when instead we could be buying the highest quality of fresh food? I am on a tight budget, so I shop the sales. Buying good food is an investment in my future. Without good nutrition, my body is going to suffer and my future depends on my health.

THREE: Cook, even when I do not feel like it.
Most of us can’t afford to have a cook or eat out everyday. In order to eat healthy, we need to cook healthy meals. One way to enjoy cooking is to listen to wonderful music while preparing a meal. Or put a headphone on your phone and make a phone call to a close friend while you are cooking. (Just be careful to watch the stove while laughing with a friend.)

FOUR: Set a limit on treats.
If I want to be a healthy weight, then I have to set a limit on treats such as sweets, fatty foods and alcoholic drinks. Of course it’s great to have a candy bar or a glass of white wine. But treats need to be what they are called: treats, and not consumed every day and at every meal.

Five: Avoid eating more than I need as a way to solve emotional problems.
For some of us, a huge piece of cake tastes better than ever when we are feeling down. But I have to remember that whatever my problems are, they are going to be worse if I also feel bad about eating too much. I should reach for a cup of herbal tea instead of a candy bar when I am feeling blue.

Six: Make a spiritual commitment to eating well for the rest of my life.
Once again, be grateful that I am alive. Know that the best way I can give thanks for the life I am living, is to take care of the body that my spirit is living within. With a healthy body I will feel better mentally, emotionally and spiritually. I will be able to make better choices for myself, family and for my world.

So your going to a pot luck or summer party... what could you take...how 'bout

Lebanese Potato Salad
Dressed with a tangy lemon vinaigrette and fresh mint, this invigorating—and dairy-free—potato salad makes the perfect summer potluck contribution.
Makes 8 servings, about 2/3 cup each
( I tried to make sure thr recipe has all the info you will need to have success)

ACTIVE TIME: 20 minutes
TOTAL TIME: 1 1/4 hours (including cooling time)
EASE OF PREPARATION: Easy

2 pounds russet potatoes (about 3 medium)
1/4 cup lemon juice
3 tablespoons extra-virgin olive oil
1/2 teaspoon salt
Freshly ground pepper to taste
4 scallions, thinly sliced
1/4 cup chopped fresh mint

1. Place potatoes in a large saucepan or Dutch oven and cover with lightly salted water. Bring to a boil and cook until tender, 25 to 30 minutes. Drain and rinse with cold water. Transfer to a cutting board. Let cool for 20 minutes. Cut the cooled potatoes into 1/2-inch pieces. 2. Whisk lemon juice, oil, salt and pepper in a large bowl. Add the potatoes and toss to coat. 3. Just before serving, add scallions and mint to the salad and toss gently.

5 g fat (1 g sat, 4 g mono);
0 mg cholesterol;

Breakfast: Why is it so important?
Why is breakfast the most important meal of the day?


I admit I,m not good at eating breakfast, so I'm really trying to change that.
I know coffee is not enough.
A healthy breakfast refuels the body and replenishes blood sugar, and gives the energy necessary to start a new day. In addition, evidence indicates that breakfast is good for both the mind and bodies health.

A healthy breakfast should consist of a variety of foods. To make a healthy breakfast each day, choose one item from at least three of the following four food groups:

Fruits and vegetables. Consider fresh, whole fruits and vegetables, fruit or vegetable smoothies, or 100 percent juice without added sugar. (Whole fruit is better because of the fiber)

Grains. Choose whole-grain rolls, bagels, hot or cold whole-grain cereals, or low-fat bran muffins.
Dairy. Consider skim milk, low-fat yogurt cups or low-fat cheeses, such as cottage and natural cheeses.

Protein. Choose hard-boiled eggs, peanut butter, lean slices of meat and poultry, or fish, such as water-packed tuna or slices of salmon.

So i have a Delicious breakfast recipe...
Oat meal blueberry pancakes:

3/4 cup oatmeal
1 cup water
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg, slightly beaten
3/4 cup fat-free (skim) milk
1 cup fresh blueberries

Plain yogurt, if desired maple syrup
1)To cook oatmeal, combine oatmeal and 1 cup of water. Cook either conventional or microwave method according to package directions.


2)Combine flour, baking powder, salt and cinnamon in a medium bowl.

3)Mix egg and milk in another medium bowl.

4)Add flour mixture to egg mixture; stir until well bended.

5)Stir in cooked oatmeal.

Heat griddle or skillet: grease if desired. Pour batter by 1/3 cupfuls onto medium hot griddle. Cook pancakes about 3 minutes or until puffed and dry around the edges. Before turning add a few fresh blueberries to each pancake. Turn and cook approximately 2 more minutes or until golden brown.

An excellent breakfast choice... better nutrition than a your regular pancakes and super delicious....

This is really COOOOL!!!
Back in college I took many art classes and was always fascinated watching other artists. Each person has many different styles and techniques... It's really amazing, to watch an artist produce. Most artist don't usually do this in public, so I came across this on youtube!!! I think i need to buy a little paint....fun..fun..fun... You might even laugh. The music is so funny!!!




And by the way...I know your asking " how did you get the paint to peel off like that?" Answer... used a watercolor masking fluid. Its really expensive, like 8 bucks for a small bottle. But its worth it....

They say you are what you eat....

I say you feel like you eat... You eat crap...
you will feel like crap or you eat well
you feel well...
I admit like most people I don't eat the perfect diet, but I do well most of the time. I love good fresh ingredients, as most chef do! Since being part of the non working, i have spent lots of time cooking for and with my family. I never have eaten better... that's crazy to think all the time I have worked in kitchens and could pretty much eat what ever I wanted good or bad. I make better choices now... I wonder why people insist on eating crap. It doesn't even taste good...if we are to busy to eat a healthy meal.. we need to slow down and change are agenda.

There is nothing difficult about healthy eating. It is simply a common-sense approach to food that is easy to live with.

Soooo.. I think I'm going to starting putting up some tasty whole food recipes.... with ingredient's that are in season and simple. Cooking is simple. If there is something you would like to learn how to prepare just let me know.

Remember "The body is the Garden of my soul" is an excellent mantra

WATERMELON and why we love it....


An American favorite for meals and snacks. People can’t seem to get enough of the sweet treat, and nutritionists have long talked up the health benefits watermelon provides. Recently research has shed new light on its numerous health benefits. Watermelon contains high concentrations of lycopene,(much more than tomatoes) an antioxidant that may help reduce the risks of cancer and other diseases. Did I mention it is delicious...
Watermelon is fat free, nutritionally low in calories and considered an ideal (Really awesome)food, and is high in energy, making it a great energy boost! Watermelon, the fruit that is really a Vegetable. Watermelon can be traced back to Africa and is part of the cucumber and squash family. Early watermelons were mainly rind and seeds. Today's varieties are larger, the flesh sweeter, the seeds smaller and the rind thinner.
It is perhaps the most refreshing, thirst quenching fruit of all. Watermelon consists of 92% water and 8% sugar, so it is aptly named. Did you know??? Americans eat over 17 lbs of watermelon each year. (I'm sure we eat more than that in my house....we love it) The largest one on world record (Guinness Book of World Records) weighed 262 pounds. ( I wonder if they ate it...was even good??)


When to look for them a the local produce market: Watermelons are available all year. (but I really recommend eating them when they are in season locally...They taste some much better)

Selecting: Choose firm, symmetrical, fruit free of cracks, bruises, soft spots or mold. Ripe watermelon will have a healthy sheen, a dull rind, dried stem, and a buttery yellow underside where it touched the ground. There should be a melon like smell or fragrance. Thump if you must, sound should be dull and hollow. Lift them, weight should be heavy for size.

I don't need to read this to convince myself to eat it.... Did I mention it's delicious and good for us to boot'

In the News: Why Snacking is Good for You

interesting ...losing weight by snacking. Many people cut out snacking to lose weight, but that this is not a good idea, because your blood sugar gets low and then you may overeat during meals. hmmm.. makes sense to me...
Snacking is OK...good snacks, that is. In fact, to keep your metabolism revved up, it’s better to snack between moderate-sized meals, than it is to have 3 large meals with no snacks.

But that doesn’t mean you should snack on just anything:

Cereal:
I know snacking at night is not a good idea, but if you can barely muster the willpower to avoid the ice cream – try a bowl of cereal instead! There are many cereals in which a whole cup is only 100-130 calories. What a deal! It’s a good snack, just dry in the bowl. It will also get rid of those hunger pangs, if you eat it slowly in pinchfuls. Try to get one high in fiber and low on the sugar...

Pickles:
Yes, pickles. (Not my thing but maybe for you!)These salty snacks have just 15 calories for the whole tasty thing. It’s a good, quick super-low calorie snack. Pickles are high in sodium so if you have high blood pressure or are watching your sodium intake, this may not be the right snack for you. or(Drink a large glass of water)

A piece of fruit:
An apple, pear, orange, banana can be surprisingly satisfying and hold off the hunger pangs. At or around 100 calories, per piece, fruit is high in nutrients, has low or no fat, and is high is fiber. They come in their own biodegradable wrapper, too, so take one with you when you’re on the go.

Celery sticks:
Celery is high in selenium and is mostly water. If it’s too bland for you, try a low-cal veggie dip (use a non-fat sour cream) or one high in fiber like hummus! While veggies and dip is a good snack, watch the dip part as it can pile on the unwanted calories!

Slushy:
What in the world, you might ask? A slushy is nothing more than a cup of fruit juice(or chunks of fresh fruit... yes more fiber) put in a blender with a bunch of ice. Blend it up and – viola - you’ve got a fun snack that’s no higher in calories than a cup of juice (100-120 calories).

Today's the day to say no to the evil twin!

Why? Let me shed some light. Some how not being aware we let our unconscious take over. So let's get honest. Would you want to drive while sleeping ..... sounds silly doesn't it?

This is why we need to make sure we are awake and in the presence of our goals, dreams, desires, wants and unmet needs. When we are awake, we will have the power to choose our path.

Life to short to snooze through it... choose to stay awake!!!!

Is Everlasting Love Possible?

According to some scientists, yes indeed…and scientists aren’t known for their romantic side!
A group of scientists from Stony Brook University studied the scans of brains of new couples and partners who’d been together for 20 year and compared the results.

More specifically, the scientists measured the chemical reactions of each person’s brain when viewing a photo of his or her partner. In many cases, the reaction was stronger in those who’d recently started their relationships. But interestingly enough, close to ten percent of the long-term couples showed the same results, reflecting that same passion as twenty years ago.

“The findings go against the traditional view of romance – that it drops off sharply in the first decade – but we are sure it’s real,” Arthur Aron, one of the researchers, told the Times Online.At first the researcher believed the couples were exaggerating their emotions but changed his mind after performing the study. “This is what the brain scans tell us and people can’t fake that.”

The researchers have nicknamed the lucky long-term couples “swans,” in honor of another animal that mates for life.

HAPPY?

Happiness is not difficult. It's only when we let other things get in the way that it seems difficult to obtain.

To me, the key to happiness is wanting what you have, rather than having what you want.
What this means is that I am satisfied with what I have, what I do, who I associate with. I don't spend my time seeking the next best thing. I spend my time appreciating what I have.
It's not hard to get there. You will need two things: a pencil and paper.


At the top of the paper write: "Things I am Grateful For" and then start making a list. As your list grows, you will automatically feel your satisfaction and happiness increase. Be grateful for everything, small and large: for butterflies and clouds and being able to breathe. For the cool of the breeze on a hot day, and the warmth of the sun in the middle of winter.
Give it a try. You'll feel happier by the time you are done.

Om Mani Peme Hum - Tibetan Short Form

A few of you asked me the meaning of the Buddhist meditation..

so here is a rough translation:
The theory, what is interesting is that the words translate to direst meaning..
"Hail to the Jewel in the Lotus."


The Dalai Lama is very good to recite the mantra Om mani padme hum, but while you are doing it you should be aware of it's meaning.

The first, Om is composed of three letters, A, U, and M. These symbolize the practitioner's impure body, speech, and mind; they also symbolize the pure body, speech, and mind of a Buddha.

The path is indicated by the next four syllables. Mani, meaning jewel, symbolizes the factors of method the intention to become enlightened.

The two syllables, padme, meaning lotus, symbolize wisdom. Just as a lotus grows forth from mud but is not sullied by the faults of mud, so wisdom is capable of putting you in a situation of non-contradiction whereas there would be contradiction if you did not have wisdom.

Om- meditation

Ma - Patience


Ni - Discipline


Pad - Wisdom


Me - Generosity


Hum - Diligence

This is a very deep mantra, it embodies all of the Buddhist philosophy.. I feel that this mantra is universal.

Believe in Yourself and People Will Be Forced to Believe in You

I been on the job hunt and going about it the wrong way... yes i believe i am good at what i do but sometimes have to look at my resume, pictures of food I've created, and just remember the journey i have traveled in my culinary career. I am far beyond many of my peers just by where I have been. I do not need someone to hold my hand i'm ready and have been.
By the way if You are unfamilar with my work here are a few pictures, I was lucky to have a professional food photographer help out....




What does being unstoppable mean?
Over the past years I keep examining the reasons that make some people resilient and that make others helpless. I was and am always trying to find out if there are some sort of actions that could make someone really unstoppable... and I was and am right about it.
I would Rack my brain at night when everyone else would be long sound asleep...What does being unstoppable mean? Does it mean being extra superior or being omnipotent? No,(of course not...) it only means that I will become a normal human being who will always reach what she wants.



I might feel sad or down just like anybody else but the main difference between them and I is that within few days my energy will be recharged back and I will find myself fighting again for what I believe in.
Being unstoppable means that life problems will never stop you or me from reaching what we want whatever happens.

Interesting Thoughts... What is my intention?

To be positive... because i know what i want, and that is the first step, INTENTION.

Part of being positive is praying and meditating, Praying (the act of communicating with god or spirit in worship) and meditating (a mental discipline that one attempts to get beyond the reflexive, "thinking" mind into a deeper state of relaxation or awareness.) To calm the mind. So on my side bar I included some music that i like to meditate and pray with... Check it out, the music is lovely.

In my quest to promote the positive.. i really was thinking about the news. Yes it's important to be informed and have a clue what is going on so I can be a good citizen of the world. Sometimes it's really hard to look at the tv or in many cases the internet with so much of it being a downer. I think if intellegent life outside of our planet was observing the news or many tv shows how aweful they might think this planet is. Yes I know i have to take the good with the bad so I ask why is there so little good news out there? i know you say it doesn't sell....sad isn't it. But i think If could start a tv show it would show case all the positive things happening... like this for example:

Using humor and play....To improve everything!!!

Have you ever sat around with family or friends and laughed so hard it almost hurt! I try to do this as often as I can.. because it's so much fun. Ohh, you haven't laughed lately? That's not so good, and if you have keep up the good work! Laughter is strong medicine for mind and body!!! All kidding aside there has been tons of research, proving the benefits of Laughter it relaxes the whole body. A good, hearty laugh relieves physical tension and stress, leaving your muscles relaxed for up to 45 minutes after.

Maybe I should become a laughalagist....
Laughter boosts the immune system. Laughter decreases stress hormones and increases immune cells and infection-fighting antibodies, so if we laugh more we will be well...
Laughter triggers the body’s natural feel-good chemicals. Endorphins (feel good chemicals) promote an overall sense of well-being and can even temporarily relieve pain.
Laughter protects the heart. Laughter improves the function of blood vessels and increases blood flow, which can help protect you against a heart attack and other cardiovascular problems.

Yes it does all that for free.. now you see why it's a good idea to hang out with funny people like me. Or in fact you can check this out....We have a local group in the pinellas county area...

A little observation...
As I was doing my errands I was people watching.... people are allowing the world to get them down. What a shame it is to allow outside forces to control U. Life is pretty darn good, and I am unemployed. So i continued through my afternoon with a smile, I think they are contagious. And it looks like a lot of people need to find one....maybe you don't have one right now, try to catch one and use it. It makes me feel better....(hmmmm.).. that kinda sounds like om, how interesting. You know the ancient sanskrit word for God or everything the alpha and omega. Its a good way to meditate... or to focus or relax, we all could benefit from that so next time you or i sigh we should try a little excercise even for one minute. So I included a little youtube therapy... close your eyes... and get comfortable, try sitting with good posture, this helps with better breathing. Make the "OM" sound on your exhale...and I bid you happiness!

Time To Make The Donuts?

Depending on your age and where you are located, you may or may not remember the famous Dunkin' Donuts commercial in which "Fred The Baker" declares "Time to Make the Doughnuts"

What was true for Fred The Baker is true for all of us...the minute we raise that first eyelid in the morning and set that first foot on the floor, it's time for us to make the donuts.

Here's my personal Manifesto Challenge , and I invite all of you to join in too.....when you get out of bed tomorrow morning, what's it going to take for us to make the donuts?

Who do need to forgive (even if it's myself)?

Journey to the North!!! I've got to take a Wii

That's right folks we (Greg, Sarah, Laszlo, and i) hopped in the car and headed North for the Evening. You ask where north.. we all jumped in the car and headed up to Pasco county. if you don't know where that is... it's the next county above us. We went to hang out with Roy (Gregs Bro) and his new Wifie Kimmie.

Are Wii Ready? We brought the Wii and played a little... they thought it was pretty cool. Some of the jokes are Wii-lly Wii-freshing. I know your saying "Your're not a Wii bit funny" Yes Iknow it's A Wii-bit too late. These are Wii-lly bad jokes. Wii buffet, all you can Wii, speaking of buffet...

Then Grabbed some Pizza for dinner.. I LOVE PIZZA.. I been on a pizza kick for a while, since the 5$ deal has come about...Yummy. Watched a movie, and fun and shinanagins were had by all.... And The Rays won too!!! What a fun day... We have all decided we have to hang out more.. we have a blast every time... pssst.. hey Sarah was that entertaining???? Wii love you.. okay that's the last..he..he..he

We all know the downsides to unemployment, so I'll talk about the good.
No longer being stuck to the usual monotonous routine day in and day out, I was able to stop for a moment and enjoy life. Ahhhh...All the time in the world with none of the $$$ to go with it. If you're crafty though, you'll notice that the Bay Area has a ton of free things going on to occupy your time.

......can be a gift. I don't mean joblessness that results in lack of direction, causing idleness and poverty. I mean the abandonment of a "real job" in favor of pursuing one's true calling. Maybe this is the time, or at least have the opportunity to think about it. I often say that people are too busy earning a living to get rich. Rich doesn't always mean money..if you know what I mean. Hmmm..that's an interesting thought...

I'm pretty thankful for the break. It sucks not getting money but it could be a lot worse. I'm pretty happy that I can sleep in (well I've beening doing this my whole life really) and have random adventures. Hurray for the advancement of random adventures!

I want to raise my glass for a toast....The glass is always half Full!!!

Back by Popular Demand!!!!

Well today was 2000 times better then yesterday... And that's no exageration by any means. The K-C's started the day with going to church with the family. This weekend My Sister Karen, Bro-in-law Joe and our the Two cutiest Nieces in the world made the trek from Jax, to visit with my Aunt Pat, and everyone else. My Aunt Pat is down visiting from the frozen tundra of Indiana. We spent the day having lunch and snacks, chit chatting, and of course have quality time with all. The two cutiest nieces (Abby and Chloe) are growing like little flowers, and they are doing fantastic. It was a great day and flew by too fast.

A Tale of Two Days

Today has been a tale of days. First Greg had his best round of golf ever. On a par 71 course he shot a 98 98!!! He then went up and spent the evening with his brother and family. The other day was Laura's. Laura's day was supposed to be simple, go to work get off and join Greg or see sister, bro in law, and nieces. Apparantly God had other plans because they went through hell with multiple groups of conflicting mothers each thinking that they were right and driving them all crazy. So you see it is a tale of two days one happier than the other. Well Goodnight!

Huh? Is that what your saying.. so you want the heck am I talking about? Well, it’s 1:15 in the morning and I’m over tired and really should be in bed since I only have one day off this week. I’m hungry, there’s nothing good to eat.. that’s normal in my house, most of you know this already. So I happen to remember Greg brought home a snickers from work that he got on Friday. That’s right you guessed it right I ate it… Yummy..it was so good. And that was the word on the inside of the candy wrapper…Hmmm. So I googled it and yes it is another made up word, but I did stumble upon urbandictionary.com. What a great site. You should check it out if you like to make up nonsense like I do….

Lesson Learned...

Monday I was off from work, I was thoroughly exhausted from the previous night work. It was busy...in the ruff and tumble way. Well, back to Monday.. I woke up at the crack of noon and was hungry. Well if you know anything about my fridge it's not know for being well stocked. So I decided to eat cereal, sounds great right? Not exactly.. My sister Sarah showed me this new honey, whatever Kashi brand cereal the friday before. I bought some and decided to try it out.. it was delicious!!! I had 3 bowls throughout the day, plusa bunch of celery sticks in the afternoon, and Kashi flatbread for dinner.....do yah see where i'm going? That's right today the fiber train had a party in my gut... I won't be doing that any time soon. Note to self...the nearest super market is 5 min away by car...

Scott William Poulton, an Australian man in his early 20s, was arrested for driving backwards on an empty highway in the Outback. Police were heading out onto the road when they saw a car coming towards them. They aimed their radar gun to check it out but were not astonished when they saw the car was approaching at a mere 56 km/hour (35 mph). They stopped the car when they realized it was "going the wrong way." The driver told them his transmission had "stuffed up" and the only gear he could use was reverse. So he did ... for about 20 km in an attempt to make it to the closest town.Police gave the man a breathalyser to determine sobriety which he, of course, passed. The driver was charged with reckless driving and driving while under suspension. It is unfortunate his license was suspended but I wonder what he had done otherwise. Is it illegal to drive in reverse? If so, why are manufacturers allowed to put an illegal gear into a car?

We started our new year with a bang. We both have been sick with a cold, Gregs all better, and I'm almost better too.We spent New Years Eve with Family playing nintendo Wii.. it's mighty fun we all Agree!!! Everyone should come over and play... be ready to sweat because we really get into it!!! Then Sat. the 3rd, I went to Kimmie's (my future sister-in-law) wedding dress fitting. And after the ladies did lunch which was fun.
Since then we have been up to not much but work and blowing our noses!!!

After work on Friday night Greg and I jumped in the car and headed up to jacksonville to visit are 3 month old neices Abby and Chloe, and Mom and Dad(Karen and Joe). The girls are doing great there growing like little flowers in the spring. Karen and Joe are doing well, with never a dull moment with the girls keeping them busy. A good time was had by all!!! We can't wait to go up in December for the baptisms!!!

Now that the baseball season is over... what do I do with my time now? I spent the past month glued to baseball games, I guess I can move onto football!!!

We WON...GO RAYS!!!!


ST. PETERSBURG -- B.J. Upton's sacrifice fly in the bottom of the 11th gave the Rays a 9-8 walk-off win over the Red Sox in Game 2 of the American League Championship Series on Saturday.
The victory tied up the series at one game apiece, much to the approval of a sellout crowd of 34,904 at Tropicana Field.


Yes, everyone i stayed up to watch the game till the wee hours of the morning....
WE WON 9 TO 8

i THINK THOSE ARE MAGIC NUMBERS... YES 9=8.. COINCIDENCE I THINK NOT!!!

Momma and Babies UPDATE!!!!

Momma Karen had her 2 weeks doctor visit. All is well, she is healing up wonderfully according to the Doc. She was able nurse them both today successfully.. yeah!!! Karen has been cleared to drive so she can visit the babies during the day... or run errands if needed.

Baby Abby is weighing in at 5 pounds 5 oz, she passed the car seat test. She had a heart episode yesterday, little of a dip. She has to go 5 days without one to go home.

Baby Chloe is weighing in at 4 pounds 2 oz, is no longer on the feeding tube. Also has moved to a regular baby bed... no more incubator. She just needs to gain some more weight and will be ready to go home!!!
